The first recipe for a Tom Collins cocktail appeared in 1876. The source was a bartenders guide written by Jerry Thomas of New York, although it's said the drink originated in the UK. It's tall, cool and pairs Gin with citrus...something that never fails.
2 parts Gin
1 part lemon juice (freshly squeezed)
1 part simple syrup
Club soda or seltzer to fill
Lemon wheel and maraschino cherries for garnish
Combine the Gin, lemon juice and simple syrup in a shaker with ice.
Strain into a tall glass filled with ice.
Fill to the top with club soda or seltzer.
Garnish with the lemon wheel & maraschino cherries.
